Christmas Morning Waffles
Kara made these the other day and said they were so yummy! Perfect to make when it is snowing outside and you just want to cuddle up and stay in your pajama's all day. Also perfect for Christmas morning! They're easy to make and taste so good!
Christmas Morning Waffles
Christmas Morning Waffles
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 tablespoons all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 cup water
- 1 tablespoon butter
- 2-3 large sweet apples, peeled, cored and chopped
- 1/2 teaspoon ground cinnamon
- 1 tablespoon brown sugar
- pinch of salt
- 2 cups all-purpose or white whole wheat flour
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 teaspoons ground cinnamon
- 4 teaspoons baking powder
- 1/4 teaspoon salt
- 1 3/4 cups milk
- 1/2 cup vegetable, canola or coconut oil
- 1 teaspoon vanilla extract
- 2 egg whites

DIRECTIONS
- For the syrup, whisk together the sugars, flour and cinnamon in a small saucepan. Whisk in the water and vanilla. Bring the mixture to a low boil and simmer for 5-10 minutes until slightly thickened. Keep warm while preparing the apples and waffles.
- For the cinnamon apples, in a 12-inch nonstick skillet, melt the butter. Add the apples, cinnamon, brown sugar and salt. Cook over medium heat, stirring often, until the apples are tender, 5-7 minutes. Keep warm while preparing the waffles.
- In a medium bowl, whisk together the flour, white sugar, brown sugar, cinnamon, baking powder, and salt. Pour milk, vegetable oil, and vanilla extract into the flour mixture; stir until just combined. Don't overmix! The mixture should be slightly lumpy.
- In a medium glass or metal mixing bowl, beat the egg whites until soft peaks form. If you lift your beater or whisk straight up, the egg whites will form soft mounds rather than sharp peaks. Fold the beaten egg whites into the batter.
- Heat a waffle iron (greasing with cooking spray if necessary) and cook the waffles on the hot iron.
- Serve with cinnamon apples and cinnamon syrup.

Mint Truffles
This is the easiest holiday treat you will ever make and everyone will wonder how you did it. I made these for a baby shower and they were a hit. So easy to make and fun to take a few to all your neighbors to say Merry Christmas.
Mint Truffles
1 pkg fudge covered mint cookies
1/2 block 8 oz cream cheese
1 pkg mint chocolate chips
1/2 Cup white chocolate chips for decoration (optional)
1. Blend cookies in food processor until it looks like dust. Place in mixing bowl.
2. Fold in softened cream cheese with cookie dust. Easiest if mixed with hands until it looks like wet dirt.
3. Roll teaspoon sized balls and place on parchment paper.
4. Place in fridge for 1 hour.
5. Place in melted mint chips to coat entire cookie balls. Place back on parchment paper and place in fridge for 1 hour. You can be finished at this point or you can melt white chips and drizzle over top. You could also place sprinkles on top before chocolate layer has hardened.

Birthday cake for a boy
Its been a week of not posting on here. Sister is here, baking cakes like crazy, and snuggling my new niece has made for some very busy days. Happy to finally be posting again today. This cake was for the cutest 12 year old I know. He loves guns! So we made a gun cake. Not the easiest thing to come up with. With my husband in the military he knows a few things. Movie themed cake
The cutest nine year old girl I know had a movie themed birthday this weekend. She was the star of the show and needed a cake to match! It was so fun to make this cake for her!
Peanut Butter Cup cheesecake bites
Our family had a baby shower this weekend and we wanted to do dessert a little different than our usual cookies, and cupcakes. These tasty treats were perfect. Everyone loved them and they are beyond easy. Easy to make and look a little fancy. Enjoy!
Peanut Butter Cup Cheesecake Bites
1 pkg. peanut butter cups (bite size)
Mini cupcake liners
4-5 Graham crackers (smashed)
1 box Instant Jello cheesecake mix
1 bag Mini chocolate chips
1. Mix cheesecake mix according to box.
2. Spoon a tiny amount of cheesecake mix into each liner. Then place a peanut butter cup on top of cheesecake mix. Press down so it fits in the liner and the cheesecake mix kinda comes up the sides of the peanut butter cup. (Remember to remove both wrappers on peanut butter cup.)
3. Place another tiny spoonful of cheesecake mix on top and sprinkle graham cracker crumbs and chocolate chips on top. Place in fridge until ready to serve.
4. Helpful hint: If you place cheesecake mix into piping bag instead of spooning it in it will be less messy.
Sparkle Trees
A while back I bought a massive container of silver glitter thinking I would use it all on this one craft. If I used 1/8 of it I would be surprised. So I have been trying to find crafts to use it up and these simple sparkle trees are perfect. They fill in that spot you need to fill on the mantle, table, anywhere you need a decoration fill. And the best part is since I had the glitter and mod podge already, I got the rest of the supplies at the dollar store.

1. Coat entire tree in mod podge with sponge brush, roll in glitter.

Granola Bites
Kara made these the other day, then called me and said you have to make these. And now I am telling you to make these! They are so delicious, and shockingly healthy in a way. At least better than a chocolate chip cookie. Hope you enjoy.

- 2 cups quick oats
- 1 cup crispy rice cereal (like Rice Krispies)
- 1 cup creamy peanut butter
- 1 cup ground flaxseed (Cheapest at Winco in bulk section, then ground in food processor at home.)
- 1 cup mini chocolate chips
- 2/3 cup honey or agave nectar
- 2 teaspoons pure vanilla extract
1. Combined all ingredients into a bowl and mix well.
2. Form into tablespoon sized balls.
3. Place on parchment paper, let set in fridge for 1 hour.
4. Keep in container in fridge.

Dollar store craft
This holiday decoration is so beyond easy it needs no instruction. I love all the Holiday things I am finding at the dollar store. It is so great to be able to decorate and have the house filled with Christmas and know I spent not much at all. These platters are above my couch where you can see I have a mirror and some family pictures. All you have to do is draw whatever you want on the plastic silver platters with a chalkboard pen and you're done. And its great because if you mess up you can wipe it off and start over again. Hope you enjoy this as much as I do.

Gracie's 2nd Birthday Cake
Yesterday was my Gracie girl's 2nd Birthday! How is she already 2!? It is beyond crazy how fast time goes by. She had such a fun day and was spoiled. Thanks to all our family who came to her party yesterday. Means a lot to us and we are so blessed to be loved by so many! I had no clue what to do for a cake. I first wanted to do a theme of one of her favorite shows but I knew that would take much longer, and with a husband in school 24/7 I knew it would not be possible trying to do a cake and chase Gracie all day. Dollar Store Dessert
I (Joni) have a love for the dollar store. No one seems to like it very much, but I go there all the time! This dessert is called the dollar store dessert because I got my main ingredient at the dollar store. If you haven't been there lately you need to go! They sale name brand items that you would pay double, sometimes triple at the grocery store. I have some Christmas crafts I am going to be doing with items I got at the dollar store and you would never know. A few of my favorite things you can find are tupperware, you might say well you don't use it that often but here at our house we always have leftovers so its great to get 3 lids and 3 bowls all for a dollar. They have an awesome art section where I get lots of crayons and paper all for a dollar. They have spices all for a dollar. There seasonal section is seriously amazing. When I share these crafts you will be going to there for sure. Hope you like this dessert and find yourself at the dollar store soon, and loving it as much as me.

1 package vanilla pudding
2 cups heavy whipping cream
1 pkg coconut
1. Cut loaves into small slices about 1/4 inch thick. Cover 8x8 baking dish with a layer of slices.
2. Prepare pudding according to package.
3. Whip whipping cream until stiff peaks form.
4. Gently fold whipping cream and 2 cups prepared vanilla pudding until blended well.
5. Pour even layer over pound cake.
6. sprinkle coconut on top.
7. Repeat layers until you reach the top of the dish ending with a layer of pudding/cream mixture and coconut.
8. Refrigerate one hour before serving.

Crafty
Our Aunt is crafty! She has a talent that really is amazing! For as long as we can remember she has been decorating pillows for couches, beds, and chairs. She also never gives a gift without the box being completely painted as well as the card along with it. Last year for Gracie's birthday she painted a picture of Gracie shopping with shops and city scenes and it really was amazing! Halloween candy bark
Halloween candy is the best! When you throw it all together its even better! Thats what this lovely treat is. Perfect to make now before Halloween to hold you over until you take over your kid's candy! Then when you take there candy you can make it again, but its even better because they went out and got the candy for you!

3/4 Cup toffee peanuts
6 fun size butterfingers
1 box reese's pieces
3 Skor candy bars
8 Reese's peanut butter cups
1/2 Cup white chocolate chips
1. Melt chocolate chips in a microwave safe bowl, stirring every 30 seconds until melted.
2. Pour the chocolate onto a foil lined baking sheet. Lightly grease foil.
3. Now sprinkle and lightly press pretzels, peanuts, butterfingers, reese's pieces, skor, and reese's peanut butter cups into chocolate. Make sure you chop your butterfingers, skor, and reese's peanut butter cups first before you put them on chocolate.
4. Melt white chocolate and drizzle over top. Place in fridge until set. Once set you can take it out and break into pieces.

Birthday cake
This cake was fun to make! Favorite color was green and she was turning 25! The scalloped ombre theme is so fun and makes a cake so fun to look at. The numbers are made of sugar cookies and royal icing and are just a fun way to add the age rather than to use the plastic ones from the grocery store. Eyelash Extensions
I (Joni) have wanted to try eyelash extensions for a while now and I finally did it! I have only had them for a few days and I am in love. I wake up and have a little life to my face. My sister-in-law did them for me and she is awesome! She does them for a great price of $45 an hour and depending on how many real lashes you have depends on how long it takes.
